Go nuts for cashews, and don’t be afraid of the fat!For other recipes using cashew cream as the base check out the creamy caesar dressing, vegan mac & cheeze, and ranch dip.vegan tzatzikiIngredients1 C raw cashews, soaked for 20 minutes in hot water1/2 C water1/2 lime or lemon, juiced2 garlic cloves1/2 tsp sea salt1/4 tsp ground black pepper1/2 C shredded cucumber3 tbsp fresh dill, finely choppedInstructionsDrain and rinse cashews from the soaking water. Add to a high-powered blender along with water, lime (or lemon) juice, garlic, sea salt, and ground black pepper and blend until very smooth. Transfer to a bowl and stir in the shredded cucumber and chopped dill.
