Bring it to a simmer and cook stirring occasionally for 10 minutes until most of the liquid is absorbed. Set aside at room temp to cool.To make the spiced pecan topping, combine pulsed pecans, chili powder, garlic powder, cinnamon, nutmeg, thyme and sea salt.To make the cheeseball mixture, in a large mixing bowl, combine vegan cheese, mozzarella shreds, chives, shallots and garlic. Store the cheeseball bites in the fridge until serving.
